Description

A delightful and fluffy yogurt cake that melts in your mouth, perfect for any occasion.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 3 large eggs
  • 1 cup yogurt
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a round 8-inch cake pan (you can also line it with parchment paper for easy removal).
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set this aside for later.
  3. In a large bowl, whisk the eggs, yogurt, granulated sugar, vegetable oil, and vanilla extract until smooth and well combined. If you’re using lemon zest, add it here for an extra burst of flavor!
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until everything is just combined. Be careful not to overmix—it’s okay if there are a few lumps.
  5. Pour the batter into the prepared cake pan, smoothing the top with a spatula to make it even.
  6. Bake for 30-35 minutes, or until the cake is golden brown on top and a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. You can also serve it slightly warm for an extra indulgent experience!
  8. Once cooled, dust the cake with powdered sugar, top it with fresh berries, or serve with a dollop of whipped cream for the ultimate treat.
  9. Slice the cake and enjoy the light, fluffy goodness.

Notes

  • Be careful not to overmix the batter to ensure the cake remains fluffy.
  • Using fresh lemon zest is optional but adds a nice flavor.
  • This cake is delicious when served warm.
