Ingredients

  • 1 large sweet potato, cut into cubes
  • 1 pound spicy or sweet Italian sausage
  • 1 cup zucchini, diced
  • 1 large green bell pepper, chopped

  • 23 cloves of garlic, chopped
  • 34 tablespoons extra virgin olive oil (EVOO) or avocado oil
  • Flaky sea salt, to taste
  • Freshly cracked black peppercorns, to taste

Instructions

  1. Heat a large cast iron skillet over medium-high heat and add 1 tablespoon of oil.
  2. Cook the Italian sausage until browned and cooked through.
  3. Add diced onion to the skillet, then add cubed russet and sweet potatoes, seasoning with salt and pepper.
  4. Sauté the vegetables until browned, then add zucchini and bell pepper towards the end.
  5. Assemble the bowl starting with the potato mixture, then top with scrambled eggs and fresh herbs.
