Ingredients
Scale
- 4 medium russet potatoes, diced
- 1 tablespoon olive oil
- ½ pound breakfast sausage, crumbled
- ½ cup bell peppers, diced
- ½ cup onion, diced
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- Salt and pepper to taste
- 4 large eggs
- ½ cup shredded cheddar cheese
- 2 green onions, sliced
- ¼ cup fresh parsley, chopped
Instructions
- Prep the ingredients by washing and dicing the potatoes, bell peppers, and onions.
- Heat olive oil in a large skillet over medium heat and add the diced potatoes. Cook for 10-12 minutes until golden brown and crispy.
- Add bell peppers and onions to the skillet and sauté for 3-4 minutes. Stir in garlic powder, smoked paprika, salt, and pepper. Create wells in the mixture and crack the eggs into them. Cover and cook until eggs reach desired doneness, about 4-5 minutes.
- Sprinkle shredded cheddar cheese on top and garnish with sliced green onions and fresh parsley before serving.
Notes
- For extra crispy potatoes, soak diced potatoes in cold water for 30 minutes before cooking.
- Adjust seasoning to taste and feel free to add spices like cayenne pepper for extra heat.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
- This recipe can be made vegetarian by omitting the sausage and adding more vegetables or beans.
- Serve with crusty bread or tortillas for a complete meal.
