Ingredients

  • 4 medium russet potatoes, diced

  • ½ pound breakfast sausage, crumbled
  • ½ cup bell peppers, diced

  • Salt and pepper to taste
  • 4 large eggs
  • ½ cup shredded cheddar cheese
  • 2 green onions, sliced
  • ¼ cup fresh parsley, chopped

Instructions

  1. Prep the ingredients by washing and dicing the potatoes, bell peppers, and onions.
  2. Heat olive oil in a large skillet over medium heat and add the diced potatoes. Cook for 10-12 minutes until golden brown and crispy.
