A creamy and flavorful chowder made with fresh lobster, sweet corn, and crispy bacon, perfect for a comforting meal.
Ingredients

- 2 cups lobster meat, cooked and chopped
- 4 slices bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups corn kernels (fresh or frozen)
- 3 cups chicken or seafood broth
- 2 cups heavy cream
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add the diced onion and cook until translucent.
- Add the minced garlic and cook for an additional minute.
- Stir in the corn and cook for 2-3 minutes.
- Add the broth and bring to a simmer.
- Stir in the heavy cream and thyme, and let it simmer for 10 minutes.
- Add the lobster meat and season with salt and pepper. Cook for another 5 minutes.
- Serve hot, garnished with crispy bacon.
Notes
- For a spicier version, add a pinch of cayenne pepper.
- Use fresh lobster for the best flavor, but canned or frozen can be used in a pinch.
- This chowder can be made ahead of time and reheated before serving.
