Description

A flavorful and quick meal combining tender chicken with sweet mangoes and vibrant vegetables, all stir-fried together.


Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 ripe mangoes, peeled and diced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil (for cooking)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice or noodles (for serving)

Instructions

  1. Wash and pat dry the chicken breasts, then cut into bite-sized pieces.
  2. In a bowl, marinate the chicken with 1 tablespoon soy sauce, salt, and pepper for 15-20 minutes.
  3. Slice the vegetables: red and green bell peppers, and onion.
  4. Prepare minced garlic and grated ginger.
  5. In a small bowl, mix 2 tablespoons soy sauce, honey, and cornstarch to make the sauce.
  6. Heat 1 tablespoon vegetable oil in a skillet over medium-high heat, then cook the marinated chicken for 5-7 minutes until golden brown.
  7. Remove the chicken and set aside. In the same skillet, stir-fry the onions, bell peppers, garlic, and ginger for 3-4 minutes.
  8. Add the cooked chicken back to the skillet and combine.
  9. Add diced mango and pour in the sauce. Stir everything together and cook for an additional 2-3 minutes until the sauce thickens.

Notes

  • For a spicier dish, add red pepper flakes or sliced jalapeños.
  • Serve with cooked rice or noodles to complete the meal.
  • Garnish with fresh cilantro for added flavor.
