A flavorful and quick meal combining tender chicken with sweet mangoes and vibrant vegetables, all stir-fried together.

- 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 ripe mangoes, peeled and diced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil (for cooking)
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Cooked rice or noodles (for serving)
Instructions
- Wash and pat dry the chicken breasts, then cut into bite-sized pieces.
- In a bowl, marinate the chicken with 1 tablespoon soy sauce, salt, and pepper for 15-20 minutes.
- Slice the vegetables: red and green bell peppers, and onion.
- Prepare minced garlic and grated ginger.
- In a small bowl, mix 2 tablespoons soy sauce, honey, and cornstarch to make the sauce.
- Heat 1 tablespoon vegetable oil in a skillet over medium-high heat, then cook the marinated chicken for 5-7 minutes until golden brown.
- Remove the chicken and set aside. In the same skillet, stir-fry the onions, bell peppers, garlic, and ginger for 3-4 minutes.
- Add the cooked chicken back to the skillet and combine.
- Add diced mango and pour in the sauce. Stir everything together and cook for an additional 2-3 minutes until the sauce thickens.
Notes
- For a spicier dish, add red pepper flakes or sliced jalapeños.
- Serve with cooked rice or noodles to complete the meal.
- Garnish with fresh cilantro for added flavor.
