Mango Matcha Pudding is a delicious and healthy dessert that combines the earthy flavor of matcha green tea with the sweetness of mango, creating a creamy and nutritious pudding.

- 2 tsp Matcha Green tea Powder
- 1 Cup dairy-free milk of choice (Almond, oat, cashew, coconut milk)
- 4 tablespoon Chia seeds
- 1/2 tbsp sweetener of choice (like maple, honey, sugar, monk fruit sweetener, optional)
- Toppings: chopped kiwi, almond flakes (optional)
- 0.5 ml vanilla extract
- 1 mango
Instructions
- Start by sifting the Matcha powder through a sieve into a bowl to eliminate lumps.
- Pour 1/4th cup of hot water into the Matcha powder and whisk thoroughly until uniform with a regular or bamboo whisk.
- Once a fine layer of bubbles forms, the Matcha is ready.
- In a glass jar, add the dairy-free milk, prepared Matcha, vanilla extract, and Chia seeds.
- Stir to combine thoroughly to avoid clumps of chia seeds and let it rest in the fridge for 2 hours or overnight.
- Wash and peel the mango, then chop it and set aside.
- Layer the Matcha Chia Pudding in a glass jar, filling it up to half.
- Sweeten the layers if desired using sugar, maple syrup, honey, stevia, or monk fruit sweetener.
- Garnish with chopped kiwi, almond flakes, or toppings of choice.
