Description

Mango Matcha Pudding is a delicious and healthy dessert that combines the earthy flavor of matcha green tea with the sweetness of mango, creating a creamy and nutritious pudding.


Ingredients

  • 2 tsp Matcha Green tea Powder
  • 1 Cup dairy-free milk of choice (Almond, oat, cashew, coconut milk)
  • 4 tablespoon Chia seeds
  • 1/2 tbsp sweetener of choice (like maple, honey, sugar, monk fruit sweetener, optional)
  • Toppings: chopped kiwi, almond flakes (optional)
  • 0.5 ml vanilla extract
  • 1 mango

Instructions

  1. Start by sifting the Matcha powder through a sieve into a bowl to eliminate lumps.
  2. Pour 1/4th cup of hot water into the Matcha powder and whisk thoroughly until uniform with a regular or bamboo whisk.
  3. Once a fine layer of bubbles forms, the Matcha is ready.
  4. In a glass jar, add the dairy-free milk, prepared Matcha, vanilla extract, and Chia seeds.
  5. Stir to combine thoroughly to avoid clumps of chia seeds and let it rest in the fridge for 2 hours or overnight.
  6. Wash and peel the mango, then chop it and set aside.
  7. Layer the Matcha Chia Pudding in a glass jar, filling it up to half.
  8. Sweeten the layers if desired using sugar, maple syrup, honey, stevia, or monk fruit sweetener.
  9. Garnish with chopped kiwi, almond flakes, or toppings of choice.
