Description

Maple Dijon Roasted Sweet Potatoes are a delightful dish featuring sweet potatoes roasted to perfection and topped with a rich maple Dijon butter, toasted walnuts, and burrata cheese.


Ingredients

  • 2 large sweet potatoes (sliced into thick ¾-inch rounds)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp butter
  • 2 tbsp pure maple syrup
  • 1 tsp Dijon mustard
  • 1 ball burrata cheese (cut/torn into 34 pieces)
  • ¼ cup chopped toasted walnuts
  • Optional: extra maple syrup or balsamic glaze for drizzling

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet or skillet with parchment or lightly grease it.
  2. Brush both sides of the sweet potato rounds with olive oil. Season with salt and pepper. Roast for 25–30 minutes, flipping halfway through, until golden and fork-tender.
  3. In a small saucepan, melt butter with maple syrup and Dijon mustard. Simmer gently for 1–2 minutes, then remove from heat.
  4. Transfer roasted sweet potato slices to a serving plate or skillet. Spoon burrata over each slice. Drizzle with warm maple Dijon butter.
  5. Top with toasted walnuts and fresh cracked pepper. Serve warm with an optional final drizzle of maple syrup or balsamic glaze.
