Maple Dijon Roasted Sweet Potatoes are a delightful dish featuring sweet potatoes roasted to perfection and topped with a rich maple Dijon butter, toasted walnuts, and burrata cheese.

- 2 large sweet potatoes (sliced into thick ¾-inch rounds)
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tbsp butter
- 2 tbsp pure maple syrup
- 1 tsp Dijon mustard
- 1 ball burrata cheese (cut/torn into 3–4 pieces)
- ¼ cup chopped toasted walnuts
- Optional: extra maple syrup or balsamic glaze for drizzling
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet or skillet with parchment or lightly grease it.
- Brush both sides of the sweet potato rounds with olive oil. Season with salt and pepper. Roast for 25–30 minutes, flipping halfway through, until golden and fork-tender.
- In a small saucepan, melt butter with maple syrup and Dijon mustard. Simmer gently for 1–2 minutes, then remove from heat.
- Transfer roasted sweet potato slices to a serving plate or skillet. Spoon burrata over each slice. Drizzle with warm maple Dijon butter.
- Top with toasted walnuts and fresh cracked pepper. Serve warm with an optional final drizzle of maple syrup or balsamic glaze.
