Ingredients

  • 4 salmon fillets (skin-on or skinless, about 6 oz each)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • ½ teaspoon red pepper flakes (adjust for spice preference)
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ½ cup chicken or vegetable broth
  • ½ cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh basil, chopped (for garnish)

Instructions

  1. Pat the salmon fillets dry with a paper towel. Season both sides with salt, pepper, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat. Place salmon fillets skin-side down and cook for about 4 minutes until golden and crispy. Flip and cook for another 2-3 minutes, then remove from the skillet and set aside.
  3. Reduce heat to medium and add butter to the same skillet. Stir in garlic and red pepper flakes, cooking until fragrant (about 30 seconds). Add sun-dried tomatoes and sauté for another minute.
  4. Pour in heavy cream and broth, stirring well. Add parmesan cheese, Italian seasoning, salt, and black pepper. Simmer for 2-3 minutes, stirring occasionally.
  5. Return the seared salmon fillets to the skillet, spooning the sauce over them. Simmer for 3-4 minutes, allowing the salmon to absorb all the delicious flavors. Sprinkle with fresh basil, and serve warm with your favorite sides!
