Description

A creamy and delicious recipe for mashed sweet potatoes that is perfect as a side dish.


Ingredients

  • 2 pounds sweet potatoes (approximately 3 medium or 2 large)
  • 4 tablespoons butter, cut into four pieces
  • 2 tablespoons heavy cream
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • Salt & freshly ground pepper to season

Instructions

  1. Peel sweet potatoes and cut them into small pieces.
  2. Combine sweet potatoes, heavy cream, butter, sugar, and salt in a large saucepan.
  3. Cover the pan and cook over low heat for 35 to 45 minutes. The potatoes are done when they fall apart when poked with a fork.
  4. Take the pan off the heat and mash the potatoes with a potato masher.
  5. Season with salt and pepper.

Notes

  • For a sweeter flavor, you can add more sugar to taste.
  • Feel free to substitute the butter with a dairy-free alternative for a vegan option.
