Description

Mediterranean Baked Fish is a delightful and flavorful dish featuring white fish fillets baked with a colorful medley of vegetables and Mediterranean flavors.


Ingredients

  • 1.5 lbs white fish fillets (like cod, halibut, or tilapia)
  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, halved
  • 1 tablespoon capers (optional)
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges, for serving

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
  2. Toss together the onions, bell peppers, cherry tomatoes, garlic, olives, and capers in a bowl with olive oil, oregano, paprika, salt, and pepper.
  3. Spread the vegetable mixture in the baking dish and place the fish fillets on top. Squeeze lemon juice and sprinkle lemon zest, salt, pepper, and oregano over the fish.
  4. Bake uncovered for 20–25 minutes until the fish is opaque and flakes easily, and the veggies are tender.
  5. Garnish with parsley and serve with lemon wedges, rice, roasted potatoes, or crusty bread.
