Description

A flavorful twist on traditional chicken patties with Mediterranean herbs and spices.

Ingredients

  • Ground Chicken: 1 lb (preferably a mix of lean and a little fat for moisture)
  • Red Onion: 1 small, finely chopped
  • Garlic: 2 cloves, minced
  • Fresh Parsley: 1/4 cup, chopped
  • Fresh Mint: 2 tbsp, chopped
  • Dried Oregano: 1 tsp
  • Lemon Zest: From 1 lemon
  • Egg: 1 (lightly beaten)
  • Breadcrumbs: 1/2 cup (panko or regular)
  • Feta Cheese (optional): 1/4 cup, crumbled
  • Salt and Pepper: To taste
  • Olive Oil: For cooking

Instructions

  1. In a large bowl, combine the ground chicken, chopped red onion, minced garlic, parsley, mint, and dried oregano.
  2. Add the lemon zest, beaten egg, breadcrumbs, and crumbled feta cheese if using.
  3. Season with salt and pepper.
  4. Mix thoroughly until all ingredients are well incorporated, but avoid overmixing to keep the patties tender.
  5. Divide the mixture into 6–8 equal portions.
  6. Shape each portion into a patty (about 1/2-inch thick) and place them on a plate.
  7. Heat a drizzle of olive oil in a large skillet over medium-high heat.
  8. Add the chicken patties to the skillet. Cook for about 4–5 minutes per side, or until each side is golden brown and the internal temperature reaches 165°F.
  9. Work in batches if necessary, ensuring the patties aren’t crowded.
  10. Transfer the cooked patties to a serving platter.
  11. Serve warm with a side of tzatziki, Greek yogurt sauce, or alongside a crisp salad and warm pita bread for a complete Mediterranean experience.

Notes

  • For extra flavor, marinate the chicken mixture for an hour before cooking.
  • These patties can also be grilled for a smoky flavor.
  • Leftovers can be stored in the refrigerator for up to 3 days.
