A flavorful twist on traditional chicken patties with Mediterranean herbs and spices.
Ingredients
- Ground Chicken: 1 lb (preferably a mix of lean and a little fat for moisture)
- Red Onion: 1 small, finely chopped
- Garlic: 2 cloves, minced
- Fresh Parsley: 1/4 cup, chopped
- Fresh Mint: 2 tbsp, chopped
- Dried Oregano: 1 tsp
- Lemon Zest: From 1 lemon
- Egg: 1 (lightly beaten)
- Breadcrumbs: 1/2 cup (panko or regular)
- Feta Cheese (optional): 1/4 cup, crumbled
- Salt and Pepper: To taste
- Olive Oil: For cooking
Instructions
- In a large bowl, combine the ground chicken, chopped red onion, minced garlic, parsley, mint, and dried oregano.
- Add the lemon zest, beaten egg, breadcrumbs, and crumbled feta cheese if using.
- Season with salt and pepper.
- Mix thoroughly until all ingredients are well incorporated, but avoid overmixing to keep the patties tender.
- Divide the mixture into 6–8 equal portions.
- Shape each portion into a patty (about 1/2-inch thick) and place them on a plate.
- Heat a drizzle of olive oil in a large skillet over medium-high heat.
- Add the chicken patties to the skillet. Cook for about 4–5 minutes per side, or until each side is golden brown and the internal temperature reaches 165°F.
- Work in batches if necessary, ensuring the patties aren’t crowded.
- Transfer the cooked patties to a serving platter.
- Serve warm with a side of tzatziki, Greek yogurt sauce, or alongside a crisp salad and warm pita bread for a complete Mediterranean experience.
Notes
- For extra flavor, marinate the chicken mixture for an hour before cooking.
- These patties can also be grilled for a smoky flavor.
- Leftovers can be stored in the refrigerator for up to 3 days.
