Ingredients

  • 4 boneless skinless chicken breasts, cut into thin cutlets
  • 2 medium zucchinis, sliced into ¼-inch rounds
  • 3 Roma tomatoes, chopped
  • 1 red onion, thinly sliced
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 2 garlic cloves, crushed
  • 1 tsp dried oregano
  • 2 tbsp fresh basil, chopped
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Sea salt and cracked black pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a large baking dish.
  2. Drizzle chicken with olive oil, season with garlic powder, oregano, salt, and pepper. Let marinate 10 minutes.
  3. Layer sliced zucchini in the baking dish, place seasoned chicken on top, then add tomatoes, onions, and crushed garlic.
  4. Top evenly with mozzarella and Parmesan cheeses.
  5. Cover with foil and bake for 20–25 minutes. Uncover and broil 2–4 minutes until cheese is golden. Ensure chicken reaches 165°F internal temperature.
  6. Let rest 5 minutes before serving. Garnish with parsley if desired.

Notes

Avoid overcrowding the dish and use a hot oven for best results. For spicier flavor, add red pepper flakes or a spoonful of pesto.
