- 4 boneless skinless chicken breasts, cut into thin cutlets
- 2 medium zucchinis, sliced into ¼-inch rounds
- 3 Roma tomatoes, chopped
- 1 red onion, thinly sliced
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 2 garlic cloves, crushed
- 1 tsp dried oregano
- 2 tbsp fresh basil, chopped
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Sea salt and cracked black pepper, to taste
- Fresh parsley, chopped (optional)
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a large baking dish.
- Drizzle chicken with olive oil, season with garlic powder, oregano, salt, and pepper. Let marinate 10 minutes.
- Layer sliced zucchini in the baking dish, place seasoned chicken on top, then add tomatoes, onions, and crushed garlic.
- Top evenly with mozzarella and Parmesan cheeses.
- Cover with foil and bake for 20–25 minutes. Uncover and broil 2–4 minutes until cheese is golden. Ensure chicken reaches 165°F internal temperature.
- Let rest 5 minutes before serving. Garnish with parsley if desired.
Notes
Avoid overcrowding the dish and use a hot oven for best results. For spicier flavor, add red pepper flakes or a spoonful of pesto.
