Description

Mediterranean Delight Tzatziki Chicken Salad is a refreshing and flavorful dish that combines tender chicken with a creamy tzatziki dressing, enhanced by fresh vegetables and optional toppings for an irresistible meal.


Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 cup Greek yogurt
  • 1/2 cup cucumber, finely grated and squeezed dry
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp red wine vinegar
  • 1 clove garlic, minced
  • 1 tbsp fresh dill, chopped (or 1 tsp dried dill)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup cherry tomatoes, halved (optional)
  • 1/4 cup red onion, finely chopped (optional)
  • 1/4 cup kalamata olives, sliced (optional)
  • 1/4 cup feta cheese, crumbled (optional)

Instructions

  1. Prepare the Chicken: If using raw chicken, season it with olive oil, oregano, garlic powder, salt, and pepper. Grill, bake, or pan-fry until fully cooked (internal temp 165°F / 75°C). Let cool, then shred or dice the chicken. (Skip this step if using rotisserie chicken!)
  2. Make the Tzatziki Dressing: In a bowl, mix Greek yogurt, grated cucumber, olive oil, lemon juice, red wine vinegar, garlic, dill, salt, and pepper. Stir until smooth and creamy.
  3. Assemble the Salad: In a large bowl, combine shredded chicken, cherry tomatoes, red onion, olives, and feta (if using). Pour the tzatziki dressing over the top and mix until well coated.
  4. Serve & Enjoy: Serve chilled or at room temperature. Enjoy in a lettuce wrap, pita, sandwich, or on its own as a salad.
