- 2 cups cooked chicken, shredded or diced
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1 cup Greek yogurt
- 1/2 cup cucumber, finely grated and squeezed dry
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp red wine vinegar
- 1 clove garlic, minced
- 1 tbsp fresh dill, chopped (or 1 tsp dried dill)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup cherry tomatoes, halved (optional)
- 1/4 cup red onion, finely chopped (optional)
- 1/4 cup kalamata olives, sliced (optional)
- 1/4 cup feta cheese, crumbled (optional)
Instructions
- Prepare the Chicken: If using raw chicken, season it with olive oil, oregano, garlic powder, salt, and pepper. Grill, bake, or pan-fry until fully cooked (internal temp 165°F / 75°C). Let cool, then shred or dice the chicken. (Skip this step if using rotisserie chicken!)
- Make the Tzatziki Dressing: In a bowl, mix Greek yogurt, grated cucumber, olive oil, lemon juice, red wine vinegar, garlic, dill, salt, and pepper. Stir until smooth and creamy.
- Assemble the Salad: In a large bowl, combine shredded chicken, cherry tomatoes, red onion, olives, and feta (if using). Pour the tzatziki dressing over the top and mix until well coated.
- Serve & Enjoy: Serve chilled or at room temperature. Enjoy in a lettuce wrap, pita, sandwich, or on its own as a salad.
