A delicious and healthy Mediterranean-inspired quinoa bowl packed with protein and fresh vegetables.
Ingredients

- 1 cup quinoa, rinsed
- 2 cups water
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 bell pepper, diced
- ½ cup feta cheese, crumbled
- 2 tablespoons olive oil
- 2 tablespoons tahini
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- In a pot, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15 minutes or until water is absorbed. Fluff with a fork.
- In a large bowl, combine cooked quinoa, chickpeas, cucumber, bell pepper, and feta.
- In a small bowl, whisk together olive oil, tahini, lemon juice, salt, and pepper.
- Drizzle the dressing over the quinoa bowl and toss to combine.
Notes
- Feel free to add other vegetables like tomatoes or olives for extra flavor.
- This dish can be served warm or cold.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
