Melon and Pineapple Salad

Description

A refreshing and vibrant salad made with a mix of melons and pineapple, drizzled with a honey lime dressing and topped with walnuts and mint.


Ingredients

  • Watermelon – 4 cups, diced (preferably de-seeded)
  • Pineapple – 4 cups, diced
  • Muskmelon – 4 cups, diced
  • Honey – ¼ cup
  • Lime juice – ¼ cup
  • Fresh mint leaves – a handful, chopped
  • Walnuts – ¼ cup, roughly chopped
  • A pinch of salt

Instructions

  1. First prepare all the fruits – watermelon, muskmelon and pineapple. Peel the watermelon and cut it into 1-inch cubes. Peel pineapple and remove the core, then cut the flesh into 1-inch cubes. Peel and cut the muskmelon into 1-inch cubes too.
  2. Take all the fruits in a large mixing bowl. Keep them in the refrigerator while you make the honey lime salad dressing.
  3. Take a small mixing bowl and add honey, lime juice, and a pinch of salt to bring out the flavor of both. Whisk using a fork or a wire whisk.
  4. Now take out the fruit bowl from the refrigerator and drizzle the prepared honey lime salad dressing on top.
  5. Using 2 salad mixers, toss the fruits to evenly distribute the dressing allowing each fruit cube to be infused with the sweet & tangy liquid.
  6. Once the salad is nicely mixed, sprinkle the chopped walnuts to add crunch to your velvety smooth fruit salad.
  7. Finally, garnish with freshly chopped mint leaves and serve the salad immediately or slightly chilled. Enjoy!

  • For best results, use ripe fruits.
  • Can be served as a side dish or a light dessert.
  • Store leftovers in the fridge for up to 24 hours.
