Ingredients

  • 1 cup breadcrumbs (or almond flour for gluten-free)
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 large egg
  • 2 tablespoons olive oil (or melted butter for extra richness)
  • 1 teaspoon dried oregano (or Italian seasoning)
  • 1 teaspoon smoked paprika (optional, for depth)
  • Salt and black pepper, to taste
  • ¼ cup ketchup (for glaze)
  • 1 tablespoon Worcestershire sauce (for glaze)
  • 1 tablespoon honey (or maple syrup for a vegan option, for glaze)
  • 1 teaspoon garlic powder (for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a loaf pan or line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, minced garlic, chopped onion, egg, olive oil, oregano, smoked paprika, salt, and black pepper. Mix gently until just combined.
  3. Transfer the mixture to the prepared loaf pan or shape it into a loaf on the lined baking sheet. Smooth the top and sides for an even shape.
  4. In a small bowl, whisk together the ketchup, Worcestershire sauce, honey, and garlic powder. Brush the glaze over the meatloaf.
  5. Bake in the oven for 45–50 minutes or until the internal temperature reaches 165°F (74°C). Optionally, broil for 2–3 minutes for extra caramelization.
  6. Remove from the oven and let it rest for 10 minutes before slicing. Serve warm.
