Cheesy, crunchy, spicy, and downright addictive—this crowd-pleasing Mexican White Trash Casserole is the ultimate comfort food with a Tex-Mex twist!

- 1 bag Nacho Cheese Doritos, crushed (save some whole for topping, if desired)
- 2 cups shredded cooked chicken or ground beef (browned and drained)
- 2 cups shredded cheese (cheddar, Mexican blend, or your favorite)
- 1 can (10.75 oz) cream of chicken soup
- 1 can Rotel (diced tomatoes & green chilies), undrained
- ½ cup sour cream
- ½ cup milk
- ½ packet taco seasoning (or more to taste)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix together: Cream of chicken soup, Rotel tomatoes, sour cream, milk, and taco seasoning.
- Add in your shredded chicken or ground beef and mix until well coated.
- Stir in 1½ cups of the shredded cheese.
- In a greased 9×13-inch baking dish, layer: Half of the crushed Doritos, the chicken/cheese mixture, remaining crushed Doritos, and top with the last ½ cup (or more) of cheese.
- Cover with foil and bake for 25 minutes, then uncover and bake another 10 minutes, or until bubbly and golden.
- Let it cool for 5 minutes before serving.
