Description

Cheesy, crunchy, spicy, and downright addictive—this crowd-pleasing Mexican White Trash Casserole is the ultimate comfort food with a Tex-Mex twist!


Ingredients

  • 1 bag Nacho Cheese Doritos, crushed (save some whole for topping, if desired)
  • 2 cups shredded cooked chicken or ground beef (browned and drained)
  • 2 cups shredded cheese (cheddar, Mexican blend, or your favorite)
  • 1 can (10.75 oz) cream of chicken soup
  • 1 can Rotel (diced tomatoes & green chilies), undrained
  • ½ cup sour cream
  • ½ cup milk
  • ½ packet taco seasoning (or more to taste)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix together: Cream of chicken soup, Rotel tomatoes, sour cream, milk, and taco seasoning.
  3. Add in your shredded chicken or ground beef and mix until well coated.
  4. Stir in 1½ cups of the shredded cheese.
  5. In a greased 9×13-inch baking dish, layer: Half of the crushed Doritos, the chicken/cheese mixture, remaining crushed Doritos, and top with the last ½ cup (or more) of cheese.
  6. Cover with foil and bake for 25 minutes, then uncover and bake another 10 minutes, or until bubbly and golden.
  7. Let it cool for 5 minutes before serving.
