Description
Mini Chicken Fajita Wonton Cups are a delicious and easy-to-make appetizer featuring seasoned chicken and veggies baked in crispy wonton wrappers.

- 1 package (12 ounces) wonton wrappers
- 1 pound boneless, skinless chicken breasts, diced
- 1 tablespoon olive oil
- 1 medium onion, thinly sliced
- 1 bell pepper (red or green), thinly sliced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream or Greek yogurt (for topping)
- Fresh cilantro, chopped (for garnish)
- Slices of jalapeño (optional, for extra heat)
Instructions
- Preheat your oven to 375°F (190°C).
- Lightly grease a mini muffin tin. Press each wonton wrapper into the cups, shaping them to fit. You can use a small cup to help mold them if needed. Bake the wontons for about 8-10 minutes until they are golden and crispy. Remove from the oven and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with chili powder, cumin, paprika, garlic powder, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through.
- Add the sliced onion and bell pepper to the skillet. Cook for an additional 5 minutes until the vegetables are tender and slightly caramelized.
- Once the wonton cups have cooled slightly, fill each cup with the chicken and veggie mixture. Top each filled cup with a sprinkle of shredded cheese.
- Return the filled wonton cups to the oven for another 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a minute. Top each cup with a dollop of sour cream or Greek yogurt, a sprinkle of fresh cilantro, and jalapeño slices if desired. Serve warm and enjoy!
Notes
- For a vegetarian version, substitute chicken with black beans or other vegetables.
- Feel free to adjust the spices according to your heat preference.
- These cups can be assembled in advance and baked just before serving.
