Description

A refreshing and creamy mint chocolate chip ice cream that combines the cool flavor of mint with rich chocolate chunks.


Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 teaspoon mint extract
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1/4 teaspoon green food coloring (optional)
  • 1 cup semi-sweet chocolate chunks or mini chocolate chips

Instructions

  1. In a medium mixing bowl, whisk together the heavy cream, whole milk, and granulated sugar until smooth and sugar is dissolved.
  2. Add the mint extract, vanilla extract, and salt. Stir well. If using, add food coloring and mix until the color is even.
  3. Chill the mixture in the refrigerator for at least 2 hours or until completely cold.
  4. Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions (about 20–25 minutes) until it reaches a soft-serve consistency.
  5. During the last 5 minutes of churning, add the chocolate chunks or mini chocolate chips so they are evenly incorporated.
  6. Transfer the ice cream to an airtight container, smoothing the top. Press parchment paper directly onto the surface of the ice cream.
  7. Freeze for at least 4 hours, or until the ice cream is firm and scoopable.
  8. Let the ice cream soften slightly before scooping and serving.

Notes

  • For a more intense mint flavor, increase the mint extract.
  • Homemade ice cream can be stored in the freezer for up to two weeks.
