Description

Delicious Monkey Muffins made with bananas, chocolate chips, and coconut.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 cups whole wheat flour
  • 1 cup granulated sugar
  • 11/2 tablespoons baking powder
  • 1 tsp salt
  • 2 cups 2% milk
  • 2 tsp vanilla extract
  • 2 eggs
  • 1 cup canola oil
  • 2 ripe bananas, mashed
  • 3/4 cup sweetened coconut
  • 1 cup chocolate chips + more for sprinkling

Instructions

  1. Preheat oven to 400 & line your baking tins.
  2. Combine the first 5 ingredients (flours, baking powder, sugar, salt) and set aside.
  3. Mix egg, oil, vanilla & milk in a mixer bowl with paddle attachment.
  4. Add banana and mix slowly to avoid splashing.
  5. Slowly add dry mixture and mix until combined.
  6. Mix in chocolate chips.
  7. Scoop about 2 tablespoons of the batter into each lined baking cup.
  8. Sprinkle with coconut & more chocolate chips.
  9. Bake for 20 minutes or until the toothpick test is clean.
  10. Cool on wire rack.
  11. Store in Ziploc bags on the counter for about 4 days or freeze if needed.
