A delicious and easy Monte Cristo Breakfast Casserole perfect for brunch or family gatherings.
Ingredients

- 4 large eggs
- 360 ml fat-free half & half
- 7.5 ml Dijon mustard
- Pinch of ground nutmeg
- Salt, to taste
- Black pepper, to taste
- 180 g stale French bread, cubed
- 255 g ham, diced
- 180 g Swiss cheese, shredded
- Non-stick cooking spray
Instructions
- Preheat the oven to 175°C. Lightly coat the interior of a 20×20 cm or 23×23 cm baking dish with non-stick spray and set aside.
- In a large bowl, whisk together eggs, fat-free half & half, Dijon mustard, ground nutmeg, salt, and black pepper until well combined.
- Add cubed French bread to the egg mixture and stir gently to coat all pieces evenly.
- Fold in diced ham and shredded Swiss cheese until distributed throughout the mixture.
- Pour the entire mixture into the prepared baking dish, spreading evenly. Bake for approximately 40 minutes, or until the edges are golden and the cheese has fully melted.
- Remove from the oven and allow to rest for several minutes before slicing. Serve warm, optionally with raspberry preserves.
Notes
- Ensure the French bread is stale for the best texture.
- This casserole can be assembled the night before and baked in the morning.
- Raspberry preserves make a great accompaniment.
