Description

These warm, sugar-free muffins are packed with oats, grated apple, carrots, raisins, and apricots—making them naturally sweet and totally satisfying. No flour. No sugar. All comfort.


Ingredients

Scale

2 cups (200 g) rolled oats, chopped in a blender

1 teaspoon baking powder

1 cup (240 ml) milk of your choice (almond, oat, dairy, etc.)

1 carrot, grated

1 apple, grated

9 dried apricots, rinsed in hot water and chopped

4 tablespoons raisins, rinsed in hot water


Instructions

Preheat oven to 350°F (175°C). Line or grease a muffin tin.

Blitz the oats in a blender or food processor until they resemble coarse meal.

In a large bowl, combine the oats and baking powder.

Add milk and stir to combine.

Fold in the grated carrot, apple, apricots, and raisins.

Spoon mixture evenly into muffin cups.

Bake for 25–30 minutes, or until muffins are golden and firm to touch.

Let cool for 5 minutes before removing from tin. Serve warm or room temp.

Notes

These muffins don’t rise much, so you can fill the cups nearly to the top.

Great to batch-make and freeze!

Perfect for lunchboxes and toddler snacks.
