Description

A delicious and easy recipe for making New Orleans-style pecan pralines at home.


Ingredients

  • 3/4 cup light brown sugar, packed
  • 1/2 cup heavy cream
  • 4 tbsp unsalted butter
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 2 cups pecan halves, toasted

Instructions

  1. Line a baking sheet with parchment paper. Toast pecans in a dry skillet over medium heat for 4–5 minutes until fragrant.
  2. In a heavy saucepan, combine granulated sugar, brown sugar, cream, butter, and salt. Stir over medium heat until butter melts and the mixture begins to bubble.
  3. Boil gently for 8–10 minutes, stirring constantly, until it reaches a thick, golden consistency (soft-ball stage ~235°F if using a thermometer).
  4. Remove from heat. Stir in vanilla and toasted pecans. Beat the mixture with a wooden spoon until it starts to thicken and lose its gloss—about 2–3 minutes.
  5. Drop spoonfuls onto the parchment-lined sheet. Let cool and set fully, about 30 minutes.
