Description

Rich, gooey, and irresistibly nutty, these No-Bake Pecan Pie Balls are the perfect bite-sized twist on the classic Southern dessert. Packed with buttery pecans, sticky Medjool dates, and hints of vanilla, they’re dipped in smooth chocolate for that decadent pie-like finish—without ever turning on the oven. Perfect for holiday platters, afternoon treats, or freezer-friendly indulgence.

Ingredients

Scale
  • 1 cup Medjool dates, pitted and softened

  • 1 ¼ cups raw pecans (plus extra for topping)

  • ½ cup almond flour

  • ½ tsp vanilla extract

  • Pinch of salt

  • 1 cup dark or milk chocolate chips (for coating)

  • 1 tsp coconut oil (optional, for smoother chocolate)

Instructions

  1. In a food processor, blend dates and pecans until finely chopped and sticky.

  2. Add almond flour, vanilla, and salt. Pulse until a dough-like mixture forms.

  3. Roll the mixture into 1-inch balls and place on a lined tray.

  4. Freeze for 15–20 minutes to firm up.

  5. Meanwhile, melt chocolate chips with coconut oil (if using) in a microwave or double boiler.

  6. Dip each ball in melted chocolate using a fork, then set back on the tray.

  7. Sprinkle with chopped pecans before chocolate sets.

  8. Refrigerate until firm. Store chilled in an airtight container.

Notes

  • Medjool dates work best due to their natural sweetness and sticky texture.

  • For a sweeter version, add 1–2 tsp maple syrup to the mix.

  • Use dairy-free chocolate chips for a fully vegan option.

  • These freeze beautifully—just thaw for a few minutes before serving.
