Packed with buttery pecans, sticky Medjool dates, and hints of vanilla, they’re dipped in smooth chocolate for that decadent pie-like finish—without ever turning on the oven. Perfect for holiday platters, afternoon treats, or freezer-friendly indulgence.
Ingredients
-
1 cup Medjool dates, pitted and softened
-
1 ¼ cups raw pecans (plus extra for topping)
-
½ cup almond flour
-
½ tsp vanilla extract
-
Pinch of salt
-
1 cup dark or milk chocolate chips (for coating)
-
1 tsp coconut oil (optional, for smoother chocolate)
Instructions
-
In a food processor, blend dates and pecans until finely chopped and sticky.
-
Add almond flour, vanilla, and salt. Pulse until a dough-like mixture forms.
-
Roll the mixture into 1-inch balls and place on a lined tray.
-
Freeze for 15–20 minutes to firm up.
-
Meanwhile, melt chocolate chips with coconut oil (if using) in a microwave or double boiler.
-
Dip each ball in melted chocolate using a fork, then set back on the tray.
-
Sprinkle with chopped pecans before chocolate sets.
-
Refrigerate until firm. Store chilled in an airtight container.
Notes
-
Medjool dates work best due to their natural sweetness and sticky texture.
-
For a sweeter version, add 1–2 tsp maple syrup to the mix.
-
Use dairy-free chocolate chips for a fully vegan option.
-
These freeze beautifully—just thaw for a few minutes before serving.
