Ingredients
- 2 large sweet potatoes, peeled and cut into 1-inch cubes
- 2 tbsp olive oil
- 2 tbsp pure maple syrup
- 1 tbsp Dijon mustard
- 1 tsp apple cider vinegar
- ½ tsp cinnamon
- ½ tsp smoked paprika (optional, for a smoky kick)
- ½ tsp sea salt
- ¼ tsp black pepper
- ⅓ cup pecans, roughly chopped
- Fresh thyme, for garnish (optional)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
In a small bowl, whisk together olive oil, maple syrup, Dijon mustard, apple cider vinegar, cinnamon, smoked paprika, salt, and black pepper until well combined.
Place the sweet potato cubes on the prepared baking sheet. Drizzle with the maple Dijon glaze and toss to coat evenly. Spread them out in a single layer to ensure even roasting.
Roast in the oven for 20 minutes. Remove the tray, sprinkle the chopped pecans over the potatoes, and give everything a quick toss. Return to the oven and roast for another 10-15 minutes, until the potatoes are caramelized and fork-tender.
Remove from the oven and let them cool for a couple of minutes. Garnish with fresh thyme if desired and serve warm!
