  • ½ tsp smoked paprika (optional, for a smoky kick)
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • ⅓ cup pecans, roughly chopped
  • Fresh thyme, for garnish (optional)

Instructions

Step 1: Preheat & Prep

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Step 2: Make the Glaze

In a small bowl, whisk together olive oil, maple syrup, Dijon mustard, apple cider vinegar, cinnamon, smoked paprika, salt, and black pepper until well combined.

Step 3: Coat the Sweet Potatoes

Place the sweet potato cubes on the prepared baking sheet. Drizzle with the maple Dijon glaze and toss to coat evenly. Spread them out in a single layer to ensure even roasting.

Step 4: Roast to Perfection
