  • 4 large sweet onions (peeled, tops trimmed, but root intact)
  • 4 tablespoons unsalted butter
  • 4 cups vegetable broth
  • Salt & pepper (to taste)
  • Fresh herbs for garnish (thyme, rosemary, or parsley)

Instructions

1. Prepare the Onions

  • Peel 4 large onions and trim the tops, but keep the root intact to hold them together.
  • Place the onions in a large pot and pour in 4 cups of vegetable broth.
  • Season with salt and pepper to taste.

2. Boil the Onions

  • Bring the broth to a boil over medium-high heat.
  • Once boiling, reduce the heat to low, cover the pot, and let the onions simmer for 30-40 minutes until fork-tender.

3. Add Butter

  • Remove the onions from the pot and place them on a serving platter.
  • Top each onion with a tablespoon of butter, letting it melt over the warm onions for extra richness.
