Ingredients

  • 2 pints of cherry or grape tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh thyme or basil sprigs (optional)
  • 1 ball of burrata cheese (about 8 oz)
  • 4 cups mixed greens (arugula, spinach, or baby kale)
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil (extra virgin)
  • Fresh basil leaves, roughly torn
  • 1 tablespoon toasted pine nuts or sunflower seeds (optional)
  • A pinch of sea salt (for finishing, optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve the cherry or grape tomatoes. Place them on a baking sheet lined with parchment paper.
  3. Drizzle the tomatoes with olive oil and toss to coat evenly. Sprinkle with oregano, garlic powder, salt, and pepper, and add fresh herbs if desired.
  4. Roast the tomatoes for 25-30 minutes, stirring halfway through, until soft and caramelized.
  5. Remove the tomatoes from the oven and let them cool slightly.
  6. While the tomatoes roast, gently tear the burrata into smaller pieces.
  7. In a large salad bowl, toss the mixed greens with olive oil and balsamic vinegar, seasoning with sea salt.
  8. Arrange the dressed greens on a serving platter and scatter the roasted tomatoes on top.
  9. Place the torn burrata pieces over the salad.
  10. Garnish with fresh basil and optional toasted nuts or seeds.
  11. Drizzle with extra olive oil and serve immediately.
