Description

A delicious Overnight Croissant Breakfast Casserole featuring buttery croissants, sausage, and cheese, baked to perfection.


Ingredients

  • 1 tbsp olive oil
  • 1 small onion, peeled and chopped
  • 1 lb breakfast sausage, mild flavor
  • 4 large butter croissants or 8 small croissants
  • 1 c shredded cheddar cheese
  • 6 large eggs
  • 1/2 c heavy whipping cream
  • 3 c whole milk, divided
  • 1/2 tsp dry mustard powder
  • 1/2 tsp salt (plus additional for the gravy to taste)
  • 1/2 tsp black pepper (plus additional for the gravy to taste)
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 2 tbsp butter
  • 3 tbsp all-purpose flour

Instructions

  1. Heat olive oil in a skillet; add chopped onions and sauté until soft and translucent.
  2. Add the sausage to the skillet and cook until browned, then drain the fat (save some for gravy), and let it cool slightly.
  3. Tear croissants into pieces and combine them with the sausage mixture and shredded cheese in a bowl.
  4. Spread the croissant mixture into a greased 9×13-inch baking dish.
  5. Whisk together eggs, heavy cream, half a cup of milk, and spices in a bowl; pour over the croissant mixture.
  6. Cover the dish and refrigerate overnight.
  7. The next day, preheat the oven to 350°F (175°C). Bake the casserole for 35 to 45 minutes until golden brown on top.
  8. While baking, prepare the gravy by melting butter with reserved sausage fat, stirring in flour, and gradually adding 2½ cups of milk, cooking until thickened. Season with salt and pepper.
  9. Serve the casserole hot with gravy on the side.

Notes

  • For a spicier kick, use spicy sausage instead of mild.
  • Can substitute croissants with other types of bread if desired.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
