Description

Indulge in the delicious combination of a chocolate sponge cake filled with creamy peanut butter and topped with chocolate ganache.


Ingredients

  • 4 large eggs, at room temperature
  • 3/4 cup granulated sugar
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 3/4 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup chopped peanut butter cups
  • 1/2 cup heavy cream (for ganache)
  • 3/4 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F. Line a jelly roll pan with parchment paper, leaving overhang, and lightly grease it.
  2. Dust a clean kitchen towel with powdered sugar and set aside.
  3. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
  4. In a large bowl, beat eggs and granulated sugar on high speed for 4 to 5 minutes until thick and pale.
  5. Add vegetable oil, vanilla, and milk, mixing gently until just combined.
  6. Fold the dry ingredients into the egg mixture until no streaks remain.
  7. Pour the batter into the prepared pan and smooth the top. Bake for 10 to 12 minutes.
  8. Invert the cake onto the sugared towel and peel off the parchment. Roll the cake with the towel and allow to cool.
  9. Beat peanut butter and powdered sugar until smooth, then add heavy cream and vanilla, beating until light. Fold in chopped peanut butter cups.
  10. Carefully unroll the cooled cake and spread the filling evenly, then re-roll tightly.
  11. Heat heavy cream for ganache until steaming, pour over chocolate chips, let sit for 2 minutes, then stir until smooth and drizzle over the cake.

  • Do not skip dusting the towel with powdered sugar, it prevents sticking.
  • Allow the ganache to set before slicing for clean cuts.
