- 3/4 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F. Line a jelly roll pan with parchment paper, leaving overhang, and lightly grease it.
- Dust a clean kitchen towel with powdered sugar and set aside.
- In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In a large bowl, beat eggs and granulated sugar on high speed for 4 to 5 minutes until thick and pale.
- Add vegetable oil, vanilla, and milk, mixing gently until just combined.
- Fold the dry ingredients into the egg mixture until no streaks remain.
- Pour the batter into the prepared pan and smooth the top. Bake for 10 to 12 minutes.
- Invert the cake onto the sugared towel and peel off the parchment. Roll the cake with the towel and allow to cool.
- Beat peanut butter and powdered sugar until smooth, then add heavy cream and vanilla, beating until light. Fold in chopped peanut butter cups.
- Carefully unroll the cooled cake and spread the filling evenly, then re-roll tightly.
- Heat heavy cream for ganache until steaming, pour over chocolate chips, let sit for 2 minutes, then stir until smooth and drizzle over the cake.

- Ensure the eggs are at room temperature for better volume.
- Do not skip dusting the towel with powdered sugar, it prevents sticking.
- Allow the ganache to set before slicing for clean cuts.
