Description

A vibrant and flavorful Pink Sourdough Bread made with dragon fruit powder for a unique color and taste.


Ingredients

  • 2 tbsp dragon fruit powder
  • 500 grams bread flour
  • 12 grams salt
  • 350 grams water
  • 100 grams active sourdough starter

Instructions

  1. Feed your starter the night before starting this recipe to ensure it is active and bubbly.
  2. In a large bowl, whisk together the flour, salt, and dragon fruit powder.
  3. In a separate bowl, whisk together the water and active starter. Add the dry ingredients to the wet and stir with a spatula until a rough, shaggy ball of dough forms.
  4. Cover and let the dough rest for 30 minutes.
  5. Stretch and fold the dough by pulling one side of the dough up, stretching it about six inches, then folding it back over the main ball. Rotate the bowl 1/4 turn and repeat until a tight ball forms. This counts as one set of stretch and folds.
  6. Cover and let the dough rest for 20-30 minutes.
  7. Repeat the stretching and folding process two additional times, spaced 20-30 minutes apart.
  8. Cover the dough and let it bulk ferment at room temperature for 5-7 hours until it has grown by 50%.
  9. Once fermented, dump the dough onto a floured work surface and fold each side into the center, then flip it over.
  10. Gently spin the dough clockwise to create tension on the surface.
  11. Transfer the dough to a banneton and refrigerate for 1 hour.
  12. Preheat the oven to 425 degrees F. Place the dough on parchment paper and cover with rice flour.
  13. Score the dough with a razor, place it in a Dutch oven, and bake for 25 minutes with the lid on.
  14. Remove the lid and bake for an additional 22-25 minutes until lightly browned.
  15. Let the bread cool for 1-2 hours before slicing.
