Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the diced potatoes, onion, bell pepper, salt, pepper, and garlic powder.
- Spread the potato mixture evenly in a greased baking dish.
- In another bowl, whisk together the eggs and milk.
- Pour the egg mixture over the potatoes in the baking dish.
- Sprinkle the shredded cheese on top.
- Bake for 45-50 minutes or until the eggs are set and the top is golden brown.
