Description
Delicious Raspberry Crumble Bars with a buttery oat topping and a tart raspberry filling.

- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 2 cups fresh raspberries (or frozen, thawed and drained)
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 tablespoon granulated sugar (for the raspberry filling)
Instructions
- In a large mixing bowl, combine 1 cup of all-purpose flour, 1 cup of rolled oats, 1/2 cup of brown sugar, 1/2 cup of granulated sugar, 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt. Mix these dry ingredients together until they are well combined.
- Pour in 1/2 cup of melted unsalted butter and 1 teaspoon of vanilla extract. Stir the mixture with a spatula or wooden spoon until it forms a crumbly texture. Avoid overmixing!
- Preheat your oven to 350°F (175°C).
- In a medium bowl, add 2 cups of fresh raspberries. If using frozen, ensure they are thawed and drained.
- Sprinkle 1 tablespoon of cornstarch over the raspberries, then add 1 tablespoon of lemon juice and 1 tablespoon of granulated sugar. Gently toss to combine.
- Line an 8×8 inch baking dish with parchment paper, leaving overhang for easy removal.
- Press about two-thirds of the crumb mixture into the bottom of the prepared baking dish.
- Pour the raspberry filling over the crust, spreading it evenly.
- Sprinkle the remaining crumb mixture over the top of the raspberry filling.
- Bake for 30-35 minutes, or until the top is golden brown and the filling is bubbling slightly.
- Let cool in the pan for 10-15 minutes, then lift out using the parchment paper and allow to cool completely before cutting into squares.
Notes
- Store leftovers in an airtight container at room temperature for up to 3 days.
- For extra flavor, you can add a pinch of cinnamon to the crumb mixture.
- Feel free to substitute other berries for raspberries if desired.
