- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp butter flavoring
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup fresh blueberries (or frozen, not thawed)
- Butterbeer Glaze:
- 1/4 cup butterscotch chips
- 2 tbsp heavy cream
- 1/3 cup powdered sugar
- Star-shaped sprinkles or edible glitter for garnish
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter, brown sugar, and granulated sugar until light and fluffy. Add egg, vanilla, and butter flavoring, and mix well.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to the wet mixture until combined.
- Gently fold in the blueberries, trying not to burst them.
- Scoop dough into 1.5-inch balls and place on prepared baking sheet, spacing apart.
- Bake for 10–12 minutes, or until edges are lightly golden. Let cool completely.
- To make the glaze, melt butterscotch chips and cream together in a small bowl until smooth. Stir in powdered sugar until you get a drizzly consistency.
- Spoon glaze over cooled cookies and decorate with star-shaped sprinkles.
Notes
- Freeze blueberries for 10 minutes before adding to prevent juice streaking.
- Use gel-based star sprinkles for a more magical, glossy look.
