Ingredients

- 2 medium cucumbers, thinly sliced
- 2 large tomatoes, diced
- ½ small red onion, thinly sliced
- ½ cup crumbled feta cheese
- ¼ cup sliced black olives (optional)
- 2 tbsp fresh parsley or basil, chopped
- For the Dressing:
- 3 tbsp extra virgin olive oil
- 2 tbsp red wine or balsamic vinegar
- 1 tsp honey (optional)
- Salt & black pepper to taste
Instructions
- Wash and dry the cucumbers, tomatoes, and herbs.
- Slice the cucumbers and tomatoes into bite-sized pieces.
- Thinly slice the red onion and chop the fresh herbs.
- In a small bowl, whisk together the olive oil, vinegar, honey, salt, and pepper until emulsified.
- In a large bowl, combine cucumbers, tomatoes, red onion, feta cheese, olives (if using), and herbs.
- Drizzle the dressing over the salad and toss gently to combine.
- Let the salad sit for a few minutes for the flavors to meld.
- Serve chilled or at room temperature for a refreshing summer bite!
