Deliciously fluffy Rhubarb Muffins with a sweet streusel topping.
Ingredients
- All-Purpose Flour (1½ cups)
- Granulated Sugar (¾ cup)
- Brown Sugar (¾ cup)
- Baking Powder (1 tsp)
- Baking Soda (½ tsp)
- Salt (½ tsp)
- Ground Cinnamon (1 tsp)
- Unsalted Butter (½ cup, melted)
- Large Eggs (2)
- Buttermilk (½ cup, or milk with 1 tsp vinegar)
- Vanilla Extract (1 tsp)
- Fresh Rhubarb (1½ cups, diced)
- All-Purpose Flour for Streusel (½ cup)
- Brown Sugar for Streusel (¼ cup)
- Ground Cinnamon for Streusel (½ tsp)
- Cold Butter for Streusel (¼ cup, cubed)
Instructions
- Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease with butter or cooking spray.
- In a small bowl, combine ½ cup all-purpose flour, ¼ cup brown sugar, and ½ tsp ground cinnamon for streusel topping. Add ¼ cup cold, cubed butter and cut in until coarse crumbs form. Refrigerate until ready to use.
- In a large bowl, whisk together 1½ cups all-purpose flour, ¾ cup granulated sugar, ¾ cup brown sugar, 1 tsp baking powder, ½ tsp baking soda, ½ tsp salt, and 1 tsp ground cinnamon.
- In a separate bowl, whisk together ½ cup melted butter, 2 eggs, ½ cup buttermilk, and 1 tsp vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the diced rhubarb.
- Spoon the batter into each muffin cup, filling about ¾ full.
- Sprinkle the chilled streusel topping over each muffin.
- Bake for 18–22 minutes until a toothpick comes out clean. Let cool in the tin for 5 minutes, then transfer to a wire rack to cool slightly.
