Instructions
- Preheat your oven to 400°F (200°C).
- Wash and trim the beets, wrap them in aluminum foil.
- Place the wrapped beets on a baking sheet and roast for about 45-60 minutes.
- Let the beets cool before peeling off the skin and slicing them into rounds.
- In a small saucepan, mix the honey and balsamic vinegar.
- Heat the mixture over medium heat, stirring occasionally, and let it simmer for about 5-7 minutes until it thickens slightly.
- Remove from heat and let it cool.
- Assemble the stack by placing a slice of beet on a serving plate, adding feta, greens, and walnuts, and repeat until all ingredients are used.

- Consider using pre-cooked beets for a quicker option.
- The glaze should be thick enough to coat the back of a spoon.
