Description

Delicious roasted pumpkin halves stuffed with a savory mixture of spinach, mushrooms, and feta cheese, drizzled with a creamy avocado herb dressing.


Ingredients

  • 1 small sugar pumpkin or kabocha squash (about 23 lbs)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil (for filling)
  • 1 small red onion, chopped
  • 2 garlic cloves, minced
  • 1 1/2 cups mushrooms, chopped
  • 2 cups fresh spinach
  • 1/3 cup crumbled feta cheese
  • Salt and black pepper to taste (for filling)
  • 1 ripe avocado (for dressing)
  • 2 tablespoons Greek yogurt
  • 2 tablespoons olive oil (for dressing)
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley or cilantro
  • 1 small garlic clove (for dressing)
  • Salt and pepper to taste (for dressing)
  • Water, to thin as needed

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut the pumpkin in half lengthwise and scoop out the seeds.
  3. Brush the inside with olive oil, then sprinkle with salt, pepper, paprika, and garlic powder.
  4. Place cut-side down on a lined baking sheet and roast for 35-45 minutes until tender and golden.
  5. Heat olive oil in a skillet over medium heat. Add chopped onion and cook for 3-4 minutes.
  6. Add garlic and mushrooms, sauté for 5-7 minutes until mushrooms are browned.
  7. Add spinach and cook until wilted. Season with salt and pepper. Remove from heat and stir in crumbled feta.
  8. In a blender, combine avocado, Greek yogurt, olive oil, lemon juice, herbs, garlic, salt, and pepper. Blend until smooth, adding a splash of water to reach desired consistency.
  9. Turn roasted pumpkins cut-side up. Spoon the spinach-mushroom mixture into each half.
  10. Drizzle generously with creamy avocado herb dressing and serve warm.
