A delicious and healthy Roasted Sweet Potato Salad, packed with flavors and nutrients.
Ingredients

- 1 1/2 lbs sweet potatoes (2 medium or 3 smaller sweet potatoes)
- 1 Tbsp olive oil
- 1/2 Tbsp maple syrup
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1 bunch kale (10 cups chopped)
- 1 apple, thinly sliced
- 1/2 cup pecans, lightly toasted if desired
- 1/2 cup dried cranberries or pomegranate seeds
- 2 oz goat cheese (1/2 cup crumbled)
- 3 Tbsp apple cider vinegar
- 1 Tbsp maple syrup
- 1 Tbsp dijon mustard
- 1 garlic clove, finely minced or pressed
- 1/3 cup extra virgin olive oil
- 1/2 tsp fine sea salt
- 1/8 tsp black pepper, freshly ground
Instructions
- Preheat oven to 425˚F and line a large rimmed baking sheet with parchment paper.
- Toast pecans in a dry skillet over medium heat, then transfer to a plate to cool.
- Peel and dice sweet potatoes into 1/2” thick pieces and transfer to a mixing bowl.
- Drizzle sweet potatoes with olive oil, maple syrup, sea salt, and black pepper, then toss to combine.
- Spread sweet potatoes onto the prepared baking sheet and bake for 30 minutes, flipping after 20 minutes.
- Remove sweet potatoes and let cool while preparing the salad.
- In a small bowl, combine all salad dressing ingredients and whisk together until well combined.
- Strip the kale leaves from stems, rinse, and finely chop them.
- Drizzle kale with 3/4 of the dressing and toss until softened and coated.
- Let the salad rest for 15 minutes while adding remaining ingredients.
- Add roasted sweet potatoes, apple, pecans, cranberries, and goat cheese to kale.
- Drizzle remaining dressing over the top or add to taste before serving.
Notes
- To ensure even roasting, flip sweet potatoes halfway through baking.
- This salad can be prepared in advance; just add the dressing right before serving.
- Adjust the sweetness of the dressing to personal preference.
