  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bell pepper, sliced (any color)
  • 1 cup fresh spinach (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the ingredients by chopping and slicing everything as needed.
  2. Cook the sausage in a skillet over medium heat until browned, about 4-5 minutes.
  3. Add the parboiled potatoes to the skillet and season with smoked paprika, Italian seasoning, salt, and black pepper. Cook for 5-7 minutes until crispy.
  4. Return the cooked sausage to the skillet and combine everything. If using spinach, add it now and stir for 2 minutes.
  5. Let everything cook together for another 2-3 minutes, then garnish with fresh parsley before serving.
