- 1/4 teaspoon black pepper

- 1 cup fresh spinach (optional)

Instructions
- Prepare the ingredients by chopping and slicing everything as needed.
- Cook the sausage in a skillet over medium heat until browned, about 4-5 minutes.
- Add the parboiled potatoes to the skillet and season with smoked paprika, Italian seasoning, salt, and black pepper. Cook for 5-7 minutes until crispy.
- Return the cooked sausage to the skillet and combine everything. If using spinach, add it now and stir for 2 minutes.
- Let everything cook together for another 2-3 minutes, then garnish with fresh parsley before serving.

- Parboil the potatoes for 8-10 minutes before adding them to the skillet.
