Ingredients

  • 1 pound Sausage (optional: chicken sausage or plant-based options)
  • 2 medium Sweet Potatoes, peeled and cubed
  • 1/4 cup Honey (or maple syrup for vegan option)
  • 3 cloves Garlic, minced
  • 2 tablespoons Soy Sauce (tamari for gluten-free)
  • 2 tablespoons Olive Oil (or any neutral oil)
  • 1 teaspoon Paprika (adjust to taste)
  • Salt and Pepper, to taste
  • 1/4 cup Fresh Parsley, chopped (for garnish)

Instructions

  1. Peel and cube the sweet potatoes into uniform pieces, about 1-inch cubes. Mince the garlic and gather all ingredients.
  2. In a large skillet, heat olive oil over medium heat for about 2 minutes. Add sausage and cook for 5-7 minutes until browned.
  3. Stir in cubed sweet potatoes and cook for another 5 minutes until they begin softening.
  4. In a bowl, whisk together honey, minced garlic, soy sauce, paprika, and season with salt and pepper. Pour sauce over the mixture.
  5. Cover the skillet and reduce heat to low. Simmer for about 10 minutes until sweet potatoes are tender.
  6. Remove from heat and garnish with fresh parsley. Serve hot.

Notes

  • This dish can be made with chicken sausage or completely plant-based sausage for a vegan option.
