- 2 large sweet potatoes, peeled and diced

- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- 1/4 cup honey
- 1/4 cup soy sauce
- 1 tablespoon apple cider vinegar
- 1 teaspoon ground ginger
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Toss diced sweet potatoes with olive oil, salt, and pepper in a large bowl. Spread them out on a baking sheet in a single layer and roast for 20 minutes until tender and caramelized.
- Meanwhile, heat a large skillet over medium heat. Cook the Italian sausage until browned and fully cooked, breaking it into smaller pieces. Set aside.
- In the same skillet, sauté the chopped onion and bell peppers for 5-7 minutes until softened.
- Add minced garlic and cook for another 1-2 minutes until fragrant.
- Whisk together honey, soy sauce, apple cider vinegar, and ground ginger in a small bowl. Pour this sauce over the vegetables and stir.
- Return the cooked sausage to the skillet and stir to combine. Cook for 2-3 minutes to meld the flavors.
- Add roasted sweet potatoes to the skillet and gently toss everything together. Cook for another 2 minutes until heated through.
- Garnish with fresh parsley before serving.
