Ingredients

  • 1 pound Italian sausage (sweet or spicy)
  • 2 large sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced sweet potatoes with olive oil, salt, and pepper in a large bowl. Spread them out on a baking sheet in a single layer and roast for 20 minutes until tender and caramelized.
  3. Meanwhile, heat a large skillet over medium heat. Cook the Italian sausage until browned and fully cooked, breaking it into smaller pieces. Set aside.
  4. In the same skillet, sauté the chopped onion and bell peppers for 5-7 minutes until softened.
  5. Add minced garlic and cook for another 1-2 minutes until fragrant.
  6. Whisk together honey, soy sauce, apple cider vinegar, and ground ginger in a small bowl. Pour this sauce over the vegetables and stir.
  7. Return the cooked sausage to the skillet and stir to combine. Cook for 2-3 minutes to meld the flavors.
  8. Add roasted sweet potatoes to the skillet and gently toss everything together. Cook for another 2 minutes until heated through.
  9. Garnish with fresh parsley before serving.
