- 5 cups chicken broth

- 1 package cheese tortellini (about 9 oz)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for sautéing
- 1 cup diced carrots (optional)
- 1 cup diced celery (optional)
- Parmesan cheese for garnishing (optional)
- Red pepper flakes for a spicy kick (optional)
Instructions
- Heat a large pot or Dutch oven over medium heat and add olive oil. Cook the Italian sausage for 5-7 minutes until browned.
- Transfer the cooked sausage to a plate, leaving the fat in the pot. Sauté the chopped onion for 3-4 minutes, then add minced garlic and cook for another minute.
- Pour in the chicken broth, add Italian seasoning, salt, and pepper. Return the sausage to the pot and bring to a gentle boil.
- Add the cheese tortellini and cook according to package instructions, about 5-7 minutes.
- Reduce heat to low, stir in heavy cream (or milk), and add chopped spinach. Warm through for 2-3 minutes without boiling.
