Description
A quick and tasty one-pan meal featuring sausage and a colorful mix of vegetables, perfect for a family dinner.
Ingredients

- 2 cup corn kernels (3 ears completely cooked)
- 1 tablespoon olive oil
- 12 oz cooked sausage (such as cajun sausage, andouille sausage, or smoked sausage)
- 1 large red bell pepper, diced
- 1 large zucchini, sliced
- ½ teaspoon chili powder
- Fresh cilantro, chopped
Instructions
- Heat 1 tablespoon olive oil in a cast-iron skillet on medium heat.
- Slice cooked sausage into coins and add to the skillet.
- Cook on medium heat for 5 minutes on one side, then flip and cook for 3 minutes on the other side. Remove from skillet to a plate.
- Leave some oil in the skillet for the veggies and remove extra oil to a heat-proof bowl, reserving it.
- Add diced bell pepper to the skillet and cook for about 4 minutes. (Add reserved oil if needed to prevent sticking.) Remove the cooked bell pepper to the same plate.
- Add sliced zucchini to the skillet and cook for about 3 minutes. (Again, add reserved oil as needed.)
- Slice corn kernels off the cob with a knife.
- Combine the cooked sausage, bell pepper, zucchini, and corn kernels in the skillet. Mix well, add reserved oil, and chili powder. Reheat on low heat.
- Remove from heat and top with chopped cilantro.
Notes
- Seasoning with salt may not be necessary as the sausage is usually quite salty.
- Use your best judgment for seasoning.
