Description

Crispy and flavorful Savory Sweet Potato Hash Browns that are easy to make and perfect for any meal.


Ingredients

  • 1 large sweet potato, peeled (approx. 3½ cups)
  • 2 tablespoons grated onion
  • 2 eggs
  • 1 tablespoon plain flour
  • 1/4 teaspoon kosher salt (adjust to taste)
  • 2 tablespoons vegetable oil (use more if required)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Coarsely grate the sweet potatoes and soak them in cold water, then drain and squeeze out excess moisture.
  3. In a bowl, mix together grated potatoes, grated onion, eggs, flour, and salt & pepper until well combined.
  4. Heat oil in a skillet over medium heat, scoop heaping tablespoons of the mixture, flatten them into patties, and cook until lightly browned on both sides.
  5. Transfer cooked hashbrowns to a baking sheet and bake in the oven for 10-12 minutes to finish cooking.
  6. Serve hot, optionally with sour cream.
