Crispy and flavorful Savory Sweet Potato Hash Browns that are easy to make and perfect for any meal.

- 1 large sweet potato, peeled (approx. 3½ cups)
- 2 tablespoons grated onion
- 2 eggs
- 1 tablespoon plain flour
- 1/4 teaspoon kosher salt (adjust to taste)
- 2 tablespoons vegetable oil (use more if required)
Instructions
- Preheat your oven to 350°F (175°C).
- Coarsely grate the sweet potatoes and soak them in cold water, then drain and squeeze out excess moisture.
- In a bowl, mix together grated potatoes, grated onion, eggs, flour, and salt & pepper until well combined.
- Heat oil in a skillet over medium heat, scoop heaping tablespoons of the mixture, flatten them into patties, and cook until lightly browned on both sides.
- Transfer cooked hashbrowns to a baking sheet and bake in the oven for 10-12 minutes to finish cooking.
- Serve hot, optionally with sour cream.
Notes
- Adjust salt according to your taste.
- Make sure to squeeze out as much moisture as possible for crispier hashbrowns.
