Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 2 medium sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach or kale, chopped
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Rinse quinoa under cold water.
  2. In a medium saucepan, combine rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes.
  3. Preheat oven to 400°F (200°C).
  4. Toss diced sweet potatoes with olive oil, salt, pepper, paprika, and garlic powder in a large bowl.
  5. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes, flipping halfway through.
  6. In a small bowl, whisk together tahini, lemon juice, maple syrup (or honey), minced garlic, and salt for the dressing.
  7. Add water to the dressing until desired consistency is reached.
  8. In a large bowl, combine cooked quinoa, roasted sweet potatoes, halved cherry tomatoes, and chopped spinach or kale.
  9. Drizzle with lemon tahini dressing and toss gently to combine.
  10. Garnish with fresh parsley before serving.
