Ingredients

  • 14 oz chicken or turkey sausage, sliced 1/2-inch thick
  • 2 medium sweet potatoes, peeled and cubed (1/2-inch)
  • 2 cups broccoli florets (1/2-inch)
  • 1 tablespoon unsalted butter (or olive oil)
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce (or coconut aminos)
  • 1 tablespoon apple cider vinegar
  • Kosher salt and black pepper, to taste
  • 2 tablespoons minced fresh parsley

Instructions

  1. Preheat: Heat oven to 400°F (200°C). Line a large sheet pan with parchment.
  2. Pan the ingredients: Add sliced sausage, cubed sweet potatoes, and broccoli to the sheet pan; spread in a single layer.
  3. Make sauce: Melt butter in a small saucepan; sauté garlic for 30–60 seconds. Stir in honey, soy sauce, vinegar, salt, and pepper; simmer for 2–3 minutes.
  4. Toss & roast: Pour sauce over the pan and toss to coat. Roast for 25–30 minutes, stirring once halfway, until sweet potatoes are tender and edges are caramelized.
  5. Finish: Sprinkle with parsley and serve warm.

Notes

  • For a vegan option, substitute sausage with plant-based sausage and butter with olive oil.
