A delicious recipe for shrimp tacos topped with fresh mango salsa.
Ingredients

- 1 lb shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 8 small corn tortillas
- 1 mango, diced
- 1/2 red onion, diced
- 1 jalapeño, minced
- Juice of 1 lime
- Salt and cilantro for garnish
Instructions
- In a bowl, toss shrimp with olive oil, chili powder, and salt. Set aside.
- In another bowl, combine mango, red onion, jalapeño, lime juice, and salt. Mix well and set aside.
- Heat a skillet over medium heat and cook shrimp for 2-3 minutes on each side until pink and cooked through.
- Warm tortillas in a dry skillet or microwave. Assemble tacos with shrimp and top with mango salsa. Garnish with cilantro.
Notes
- Adjust the spiciness by adding more or less jalapeño.
- For a sweeter salsa, use a ripe mango.
- These tacos can be served with avocado or sour cream if desired.
