Description

A delicious and easy Slow Cooker Beef and Broccoli recipe perfect for family dinners.


Ingredients

  • 1 ½ pounds sliced boneless beef chuck roast strips
  • 1 cup beef broth
  • ½ cup low sodium soy sauce
  • ⅓ cup dark brown sugar
  • 1 tablespoon sesame oil
  • 3 cloves minced garlic
  • 2 tablespoons cornstarch
  • 1 (14-ounce) bag frozen broccoli florets (about 3 cups)

Instructions

  1. In a mixing bowl, whisk together the beef broth, soy sauce, dark brown sugar, sesame oil, and minced garlic.
  2. Lay the sliced boneless beef chuck roast strips in the crockpot and pour the sauce over, tossing the strips to coat.
  3. Turn the crockpot on LOW and cook for 5-6 hours.
  4. About an hour before it is done, take ¼ cup of the sauce and whisk it in a small bowl with cornstarch. Slowly stir this into the crockpot.
  5. Add the frozen broccoli florets in the last 30 minutes of cooking and let the broccoli cook through.
  6. Serve over white rice and enjoy!

Notes

  • Make sure to use low sodium soy sauce to control the salt content.
  • For a thicker sauce, let it cook longer after adding the cornstarch.
