Description

A delicious side dish featuring smoky roasted sweet potatoes paired with a creamy chipotle mayo.


Ingredients

  • 2 large sweet potatoes, peeled and cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup mayonnaise
  • 1 tablespoon chipotle pepper sauce
  • 1/2 lime, juiced
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss sweet potato wedges with olive oil, smoked paprika, chili powder, garlic powder, salt, and pepper.
  3. Spread sweet potato wedges on a baking sheet and roast for 20-25 minutes, or until tender and crispy.
  4. In a small bowl, combine mayonnaise, chipotle pepper sauce, lime juice, garlic powder, onion powder, salt, and pepper. Mix well.
  5. Serve roasted sweet potatoes with chipotle mayo.

  • Adjust chipotle sauce to taste for desired heat level.
