Description

Indulge in the delicious combination of classic s’mores with a French twist in these S’mores French Macarons.


Ingredients

Scale
  • 105 grams egg whites
  • 130 grams powdered sugar
  • 120 grams almond flour, fine ground
  • 2 tablespoons natural cocoa
  • 1/4 tsp cream of tartar
  • 4 tablespoons unsalted butter
  • 1 1/4 cups powdered sugar
  • 3/4 cups marshmallow fluff
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons cornstarch
  • pinch of salt
  • 1 cup powdered sugar
  • 1 tablespoon milk or cream
  • 1 tablespoon chocolate powder (natural or Dutch)
  • 2 sheets graham crackers
  • 1 tablespoon tiny dehydrated marshmallow bits

Instructions

  1. Finely chop the dark chocolate and place it into a large bowl.
  2. Heat the heavy cream until hot to the touch and pour over the chopped chocolate. Let sit for two minutes and then mix until smooth.
  3. Let the ganache sit at room temperature or in the fridge until thickened.
  4. Sift almond flour, powdered sugar, and cocoa powder into a bowl.
  5. In a stand mixer, whisk egg whites until foamy, then add cream of tartar and gradually add sugar.
  6. Whisk on high until stiff peaks form.
  7. Fold in the dry ingredients gently until the batter reaches “flowing lava” consistency.
  8. Pipe 1 inch rounds onto a lined baking sheet and let them rest until a skin forms.
  9. Preheat oven to 300°F and bake for 13-15 minutes.
  10. Let cool completely before removing from the baking sheet.
  11. Dip one side of the shell in melted dark chocolate and sprinkle with crushed graham crackers.
  12. For Swiss meringue, whisk sugar and cream of tartar into egg whites over simmering water until dissolved, then beat until stiff peaks form.
  13. Pipe meringue onto macaron shells, add ganache, torch gently, and assemble the shells.
  14. Store the assembled macarons in an airtight container in the fridge for 12-24 hours before serving.
